Lime Marinated Grilled Halibut Topped With Mango Salsa 🥭

This is another summertime favorite. We grill the fish on the Traeger & it always comes out flaky & delicious! You can substitute another white fish if you don’t have halibut… Pairs perfect with a white wine!

Ingredients for mango salsa:

2 large mangos, peeled & chopped into small cubes

5-6 large jalapeño peppers, roughly chopped

2 fresh ears of corn (slice corn from the cob)

1 bunch of cilantro (chopped)

1 large avocado (or 2 small), diced

10 cherry tomatoes, halved

3 tablespoons olive oil

Salt

Pepper

Juice from 3 large limes

Fish:

Fresh halibut fillets, deboned

1 tablespoon olive oil

Salt

Pepper

1 pinch ground coriander

1 pinch Chile powder

Juice from 1 lime (reserve slices for grilling)

To Make Salsa:

In a small bowl, whisk the olive oil, lime juice, salt & pepper & set aside.

In a large bowl, mix together the tomatoes, mango, jalapeños, corn & cilantro. Gently fold in avocado. Pour lime marinade over the salsa & combine.

Tip: For extra flavor, try lightly grilling the corn & mango

Fish: In a small bowl, combine lime juice, olive oil & spices. Brush both sides of the fish with the marinade. Grill about 4 minutes each side with lime slices on top.

Serve on a platter with heaping scoops of salsa on of each filet. Add more slices limes for garnish. Enjoy!
