Caprese Salad ๐Ÿ…

This is a super simple but absolutely delicious salad! Whenever heirloom tomatoes are in season, this is my go-to recipe for a healthy snack or side dish. Pairs perfectly with fresh bread, green salad, pasta and of course wine ๐Ÿท

Ingredients: 3 large heirloom tomatoes (different colors and shapes if available)

Fresh basil leaves

Greek marinated olives (medleys are especially delicious with this salad)

Fresh mozzarella (in water)

1-2 tablespoons of good quality olive oil

Pinch of salt & pepper

Balsamic glaze

To Make:

Slice the tomatoes into half inch thick slices

Slice mozzarella (or buy pre-sliced)

Tear off basil leaves (1:1 ratio with tomatoes & mozzarella)

Grab a beautiful serving dish and begin assembling your salad: tomato slice, basil leaf, mozzarella slice & repeat until you have used them all.

You can assemble in any design you like & that works with your serving dish.

Spread the olives over your salad then drizzle with olive oil, salt & pepper.

Finally, drizzle you balsamic glaze.

Try topping with creamy avocado slices
