



Cheesy potatoey goodness! Scalloped potatoes are one of my absolute favorite potato dishes! This hearty side is perfect for a steak dinner or you can make it the star dish with a lighter side dish such as green salad or roasted asparagus. No matter what you serve alongside this dish, itโs going to be delicious!
Ingredients:
1/4 cup butter
2-3 cloves garlic, peeled & minced
1/4 cup flour
2 cups milk
10-12 Yukon gold potatoes, scrubbed & sliced thin using a mandolin
Pinch salt
Tsp pepper
Pinch nutmeg
1 cup gruyere, grated
1 cup extra sharp cheddar, grated
1 cup non-smoked gouda, shreddded





To Make:
Preheat oven to 400
Melt butter over medium low heat
Once butter is melted, add garlic & whisk for 2 minutes
Add flour & whisk for an additional 2 minutes to create a roux
Pour in milk and continue whisking for 2 minutes until the sauce thickens
Remove from heat & whisk in salt, pepper & nutmeg then add cheeses, reserving about 1 cup for layering & topping
Begin assembling in an 8×8 greased baking dish: Layer of potatoes followed by layer of cream sauce followed by reserved grated cheese.
Repeat layering until you have used up all the potatoes, sauce & cheeses. Top layer should be grated cheese.
Cover dish with foil & bake for 30 minutes
Remove foil & bake for additional 15-20 minutes or until the cheese is golden brown & bubbly.
Let cool for 5-10 minutes
