





Halibut is probably my all time favorite fish. It’s delicious no matter how you prepare it! Halibut is a mild but slightly sweet & flaky white fish. Halibut is rich in selenium, magnesium and vitamins B6 & B12. While this is a fish FRY recipe and admittedly more on the comfort food end, your still feeding your body heart healthy vitamins & minerals! Recommend sides: Honey cornbread, sweet corn on the cob or green beans, macaroni & cheese or macaroni salad & sweet slices watermelon on a summer day! Cheers 🍻
Ingredients:
5-6 deboned halibut filets (fresh or frozen)
1 cup flour
1 cup yellow cornmeal
Salt
Pepper
Several pinches cayenne pepper
Several pinches paprika
1 large lemon, sliced into small wedges
Vegetable or canola oil for frying
1 clean large brown paper bag

To Make:
If using frozen filets, thaw them in a large bowl of cold water (keep filets in their vacuum sealed packaging)
Once filets are thawed (or if using fresh fish skip the first step) lay them out on a large sheet pan & season both sides with salt, pepper & a few squeezes of fresh lemon juice
Fill a large, semi-deep frying pan a little more that half way with oil and heat on medium high
While oil is heating, use a sharp knife to slice filets into smaller portions (about 3 portions per filet)
In a large mixing bowl, combine flour, corn meal, salt, pepper, cayenne & paprika (I use a few pinches of each, but feel free to adjust to get the heat level you desire)
Whisk together well and pour flour & seasoning mixture into your clean paper bag
Using large tongs, add your fish to the paper bag and shake well to ensure fish is well coated
Place a paper towel lined sheet pan or baking dish nearby as you prepare to fry your fish
Using your tongs, begin frying your fish in small batches (don’t overcrowd the fish)
Cook on each side 3-4 minutes & transfer to your paper towel lined dish.
Squeeze a little fresh lemon juice over the fish as soon as you remove them from the oil & serve with remaining lemon wedges. If you like a little extra heat like my family does, I recommend Frank’s Red Hot! It’s spicy & slightly salty & it’s the perfect compliment to this delicious fish!
