Grilled Butter Shrimp Tacos with Corn Salsa 🍤

Looking for a fresh spin on Taco Tuesday? These healthy shrimp tacos are full of flavor & super fresh & healthy

Ingredients:

1 lb fresh shrimp, peeled & deveined on both sides

1/4 cup butter

1/4 cup olive oil

Juice from 4-5 large limes (reserve some zest for shrimp)

2 pinches salt

Pepper

1 cup fresh corn kernels off the cob

4-5 large jalapeño peppers, chopped

1 large cucumber, peeled & diced into cubes

1 cup cherry tomatoes, halved

1 bunch cilantro, chopped

1/4 cup cotija cheese, crumbled

1 large semi-firm avocado, cut into cubes

Tortillas, corn or flour

In a small mixing bowl, whisk together olive oil, lime juice, salt & pepper

To Make:

In a large mixing bowl combine corn, tomatoes, cucumbers, jalapeños & gently fold in avocado

Slowly pour olive oil & lime juice marinade over the corn salsa

Gently mix so that salsa is coated with marinade

Place shrimp in a bowl & season with salt, pepper & lime zest

Melt butter in a pan over low heat

Once butter has melted add shrimp to pan and increase heat to medium

Cook shrimp until pink, about 2 minutes each side

Remove shrimp from heat & squeeze fresh lime juice over them

Wrap tortillas in foil to heat in the oven or heat on a clean pan. Tortillaland brand offers fresh tortillas in the refrigerated section of the grocery store. This brand has both corn & flour tortillas & you just heat them in a pan on the stovetop. They are excellent for tacos!

Assemble tacos with shrimp, corn salsa & top with cotija cheese crumbles
