











This quinoa fruit salad is delicious & healthy. Packed with antioxidants & rich in fiber! If you are trying to ditch processed sugar but need something to satisfy your sweet tooth, look no further! You can use any fruit that you like! Sweet & tart. The perfect dish for summer!
Ingredients:
1 cup quinoa (red or white work great).
2 cups fresh blackberries
2 cups fresh blueberries
2 cups fresh raspberries
2-3 large mangos, peeled & diced into small cubes.
7-8 large limes, juiced.
1/2 cup honey

To Make:
Cook the quinoa on the stovetop according to the directions.
Once the quinoa has cooled, transfer to a large bowl & mix in berries & mangos.
In a separate bowl, whisk lime juice with honey until well combined. Add more honey for a sweeter salad.
Combine honey lime juice with quinoa & fruit & mix until we’ll combined
Transfer to a serving bowl & enjoy! Great for topping yogurts or enjoy as is!
