These fritters pair perfectly with breakfast or brunch! Top them with a fried egg or some salsa & sour cream! My husband tops them with honey for a sweet & savory kick!



Ingredients:
1/2 cup yellow cornmeal
1/2 cup flour
1 cup buttermilk (regular milk will work too)
3 tablespoons melted butter
1 large egg, lightly beaten (room temp)
1/2 cup sharp cheddar, grated
2 jalapeño peppers, diced
1 tablespoon sugar
1 tablespoon baking powder
1 pinch salt
To Make: Combine flour, cornmeal, baking powder, sugar & salt in a mixing bowl.
In a separate bowl, combine milk egg & melted butter.
Fold in dry ingredients with wet and combine.
Fold in cheese & jalapeños.
Scoop the batter into a greased skillet (medium heat) & lightly fry for a few minutes on each side until golden brown.
