



This simple dish is heart healthy & packed with omega-3 benefits! Crispy skin outside & juicy on the inside, this salmon is packed with delicious flavor! Pair with a side of wild rice & asparagus for a light fare. π£
Ingredients:
2-3 wild caught salmon filets
Olive oil
Fresh dill
1 Lemon (zest & juice)
1 Lemon (sliced)
Salt & pepper

To Make:
Preheat oven at 350
Heat a few tablespoons of olive oil in a pan.
Brush the filets with olive oil & lemon zest then season with salt & pepper.
Chop the fresh dill sprigs & rub onto salmon.
Place filets in pan, skin side down.
Sear for about 4 minutes, then flip the filets over.
While filets are searing on the other side (4 minutes) use a sharp knife to finely slice off the skins. Season with more lemon zest, salt, pepper & dill.
Place lemon slices on the filets & transfer to a lightly oiled baking dish & bake at 350 for an additional 4-5 minutes (more or less depending on the thickness of the filets).
Remove from oven when once fish is cooked through & squeeze fresh lemon juice over the filets.
Transfer to a serving platter and garnish with lemon slices & fresh dill sprigs. π πΏ
