


The perfect compliment to any crostini or bruschetta, this pasta dish is simple to make & full of fresh flavor! From my family to yours, enjoy! ๐ท
Ingredients: 1 box rainbow rotini pasta
1 cup cherry tomatoes, halved
1/2 cup kalamata olives
1 cup fresh mozzarella pearls (in water)
Fresh basil leaves for garnish
Herbed Dressing
1/2 cup quality olive oil
1/4 cup red wine vinegar
3-4 tablespoons dried oregano
2 tablespoons dried basil
3 tablespoons fresh chopped dill
Pinch salt
Fresh cracked pepper
Fresh cracked pink peppercorns (optional)
To Make:
Boil pasta according to box instructions
Once pasta is boiled, strain and transfer to a bowl coated with olive oil
Once pasta has cooled, add tomatoes, olives & mozzarella pearls to pasta. Try adding a diced English cucumber for extra crunch.
In a small bowl, whisk together olive oil, vinegar, dried herbs, dill, salt & pepper. Add cracked pink peppercorns if you have them.
Pour dressing over pasta & gently toss together.
Refrigerate up to an hour before serving
