








This sweet potato pie recipe is tried & true (and mother-in-law approved). If you are a pumpkin pie fan, I guarantee you will love this recipe! Great for the holidays!
Ingredients:
1 1/2 lbs sweet potatoes (yams)
2 large eggs (room temp) lightly beaten
1/2 cup evaporated milk
1 cup white sugar (or more to taste)
A healthy amount of nutmeg (a little less if using fresh grated nutmeg)
A healthy amount of cinnamon
A healthy amount of pumpkin pie spice
A tablespoon of REAL vanilla
1/2 cup melted butter
A regular (non-deep dish) pre-made pie crust (or handmade if you have a great recipe)


To Make:
Boil the sweet potatoes until fork tender (between 45 minutes-hour)
Preheat oven to 350.
Once the potatoes have cooled, use a paring knife to gently remove skins. Set sweet potatoes to the side in a large mixing bowl.
Mash up the potatoes with a standard potato masher.
Add milk, butter & eggs to the potatoes and mix with a whisk until combined.
Add in sugar, spices & vanilla.
Use an electronic beater to mix until smooth.
Pour potato mixture into your pie shell
Use aluminum foil to cover the outer edges of the pie crust.
Bake 50 minutes-hour until pie soufflés and a toothpick comes out clean.
Remove foil from crust.
Let pie cool until set then enjoy with whipped cream, cool whip or a scoop of vanilla ice cream!
