Veggie Quiche 🍳

Try adding grilled asparagus

Quiche is such a delicious & diverse dish. Enjoy for breakfast with coffee or pair with a salad & a glass of red wine for dinner. There are so many possibilities when making a quiche, so I tried to narrow this recipe down to one of my favorites. Please enjoy!

Ingredients:

7-8 large eggs (room temp)

1 cup shredded sharp cheddar (gruyere works great too if you prefer a nuttier cheese)

1/2 cup sliced mushrooms

1 cup spinach

1/4 cup diced jalapeño peppers

1/2 cup cherry heirloom tomatoes, halved

Dash of half and half

Salt & pepper to taste

1 deep dish pie crust (Pre-made works great)

To Make:

Preheat oven to 350.

In a large mixing bowl, whisk eggs together with half and half, salt & pepper.

In a large skillet, sautée peppers, mushrooms & spinach leaves with olive oil, salt & pepper & set aside when fork tender & leaves are wilted.

Grate cheddar cheese & set aside.

Pour egg mixture into pie shell.

Mix sautéed veggies & cheese into egg pie shell.

Add halved tomatoes to the quiche (I don’t sauté them as they will cook in the oven)

Foil the outer edges of the pie crust to avoid burnt edges.

Bake at 350 for 45-50 minutes (until toothpick comes out clean).

Remove foil from crust and enjoy! Try topping with fresh creamy avocado slices or peppery arugula! Enjoy!
